Grilling IS Healthy

Dr. Rodriguez over at FatMatters.com was nice enough to link to our site in her post about why grilling is good for weight loss.  At our house, we fire up the grill at least 4 times a week on average.  Our family would much rather be outside during the evenings, so grilling is a great way to get dinner going while the kids play on the porch and in the back yard.  I can’t think of a better way to spend the evenings with the family.  The kids even get involved, from manning the squirt bottle to prevent flare-ups (standing on a chair, from a safe distance of course) to building their own pizza for the grill.

So I agree, grilling is a healthy way to cook food, as it allows a lot of the fat to drip away during cooking.  As Dr. Rodriguez points out, it’s also good for your mental health as well and I couldn’t agree more.  Grilling out in the evening with the family in the back yard certainly keeps me sane during a busy work week…

Man cannot live by pork chop alone. Every now and then you must sauce it up a bit. This smokey green sauce blends great with a pork chop. The combination of roasted poblano peppers, tomatillos and garlic make a savory sauce. This might also make a great base for a roasted corn and black bean salsa, which I might have to try some day soon. I'll let you know when I do. It's best to cook this recipe on a charcoal grill, so that the smokey flavor gets infused into the peppers and tomatillos and a side of mushrooms
