Video: 5 Steak Grilling Tips

Did you know cows outnumber humans 4 to 1 in Uruguay? I’ll have to find a way to drop that new knowledge in a random conversation today. This new video from USA Today features 5 steak grilling tips from Uruguayan chef Lucia Soria. Some of these tips are controversial. For example, I don’t personally think letting the meat sit at room temperature does anything. I’m also not convinced that moving the meat releases moisture. My main goal is getting a nice, caramelized crust on each side of the steak. That means letting it sear over the hottest part of the grill, rotating to make sure the crust is even and usually only one flip to repeat the sear on the other side. I’ll then move thicker cuts to the cooler side of the grill to finish. Again searing is the goal, not water retention.

Controversial or not, it is a well done video and I am totally onboard for getting the grill as hot as you can get it and keeping seasoning to a minimum (fresh ground black pepper for me). Enjoy!

Man cannot live by pork chop alone. Every now and then you must sauce it up a bit. This smokey green sauce blends great with a pork chop. The combination of roasted poblano peppers, tomatillos and garlic make a savory sauce. This might also make a great base for a roasted corn and black bean salsa, which I might have to try some day soon. I'll let you know when I do. It's best to cook this recipe on a charcoal grill, so that the smokey flavor gets infused into the peppers and tomatillos and a side of mushrooms
