Tex Mex Burgers with Guacamole

Guacamole Burger

My favorite ethnic food by far, is Mexican. The cheese, the jalapenos, the mariachis… its pretty amazing. So, of course, the idea of a burger inspired by some of my fav Mexican flavors sounded like a great match. The guacamole added to the burger gives it a clean, fresh taste and is a perfect balance to the spiciness and heat of the burger.



  • 1 tbsp mayonnaise
  • 1 large tomato
  • 4 onion rolls
  • 1 lb 85/15 ground beef
  • 1/2 sweet onion (chopped)
  • 1 4 oz. can green chiles (hot or mild – whatever you can handle)
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp chipotle chile powder
  • 1/2 cup pepper jack cheese (shredded)


  • 2 large avocados
  • 3 tbsp red onion chopped fine
  • 1 jalepeno deseeded
  • juice of 1/2 lime
  • 4 tbsp cilantro (chopped)
  • salt & pepper to taste


To prepare guacamole:

  1. Dice avocado and add to mixing bowl
  2. Add jalapeno, cilantro and red onion
  3. Mash together to desired texture
  4. Mix in lime juice
  5. Add salt & pepper to taste

Making the Burgers:

  1. Heat chopped sweet onion in a pan until tender and set aside to cool
  2. Shred monteray jack cheese & drain green chiles
  3. Add cheese, chiles, onion and spices to ground beef and mix gentlly
  4. Form ground beef mixture into 4 patties
  5. Lighlty brush burgers with olive oil
  6. Grill burgers over medium high heat for 8-10 minutes turning once
  7. Lightly toast buns if desired (roughly 1 minute)
  8. Assemble burgers with mayonnaise on bottom, followed by a slice of tomato, the burger and top with guacamole
