Za’atar Recipe on Grilled Pita

I just came back from Israel and now find myself addicted to this amazing spice blend called za’atar (the apostrophe is silent). I was first introduced to it on the streets of Old Jerusalem, where we enjoyed it at an outdoor cafe sprinkled on fresh and warm Jerusalem bread. I wasn’t sure if it...

Quinoa with Grilled Chicken and Zucchini

If you haven’t heard of quinoa before, it is a powerful little grain of delicious nutrition. One cup of cooked quinoa contains around 15% less carbs and 60% more protein than a cup of cooked brown rice. For families like mine that eat a lot or rice, quinoa has now become the go-to, easy to prepa...

This recipe has so much going for it:

Pesto sauce

Pesto sauce recipe

I use pesto sauce in a lot of grilling recipes, so I figured I'd share how I make it.  This is a slight variant on the pesto sauce from Joy of Cooking cook book.  I changed out the choice of cheese and recommend you use toasted pine nuts. Toasting the pine nuts gives an extra nutty flavor.

Feta Greek Burger

Feta Burger with Red Pepper Aioli

My new title for Grilling Companion is Hamburger Helper.  I have a business card and everything, so that makes it official, right?  I like that title because it pretty much sums up my grilling goals lately, which is helping hamburgers get into my belly in as many combinations as possible.  I love...

Roasted Red Peppers

Roasted red peppers are a common ingredient in sauces, hummus and a lot of other delicious things. Roasting a red pepper creates a slightly smokey flavor but more importantly, the roasting brings out the natural sweetness of the pepper. Sure, you can buy jars of roasted red peppers, but the techniqu...

Grilled Chicken Sandwich with Goat Cheese and Balsamic Reduction

Goat Cheese Chicken Sandwich with Balsamic Reduction

This was the best chicken sandwich I've ever made.  Hands down.  Everything turned out great and came together perfectly.  The chicken was moist, 'cause I followed the basic instructions for grilling chicken breasts.  And the...

Stuffed Greek Pork Chops

The desire to stuff meat comes in a pretty close second place to my manly desire to cook said meat over an open flame.  What's better than cutting into a nice, juicy piece of meat and have a gooey, cheesy mixture ooze out?  Nothing, that's what!  This stuffing mixture was inspired by my love for ...

Coconut Lime Grilled Chicken

"Put de lime in de coconut....", my son is singing at the top of his lungs in the car.  "Put de lime...". I don't know who taught him the song, but I am going to find them and hurt them!  " de coconut", wait a second, limes, coconut, hmm...and CHICKEN!  Yeah!  That sounds delicious, so I wh...

Veal Chop Recipe

If you haven't eaten veal, you haven't lived. This is one of the best meals I've cooked on the grill in...well, honestly, ever. The veal chop in this recipe is incredibly tender and flavorful and juicy and ... I'm running out of adjectives, but you get the idea. It's really good.  And the best th...
