		<description>You don&#039;t need to turn them.  You don&#039;t need to wrap them either, but you can to speed up the process.  If you want to wrap them to cook quicker, do that about 2 hours into the cook because they won&#039;t take on any more smoke flavor at that point anyway.</description>
